It’s been a long time since I’ve made a bundt cake. I don’t know what I’ve been waiting for, because bundt cakes are so easy to make, and, unlike layer cakes, you don’t have to worry too much about how they look. The pan does all of the work.
To get the most apple flavor, you boil a quart of apple cider down to one cup. Some of the cider reduction goes in the cake, some of it is brushed over the baked cake, and a little of it is used to make the glaze.
I finally used the bundt pan I bought several years ago, and was super happy with how the cake was well defined and plopped right out of the pan. I’m definitely going to be baking more bundt cakes in the future.

I rarely bake cakes, mostly because they are a challenge for me. Baking one cake each month has been great for flexing new baking muscles, and my colleagues at work really appreciate it.
This recipe is pretty easy to make. You mix the dry ingredients in one bowl, and the wet ingredients in another. The most difficult part is probably peeling and grating the apples. I used my food processor, which made the job really easy. The other part that was a challenge was reducing the cider to exactly one cup. Fortunately, if you over reduce it, you can just add water!
